For me, one player that immediately comes to mind is Wataru Endo; he's a phenomenal defensive midfielder who does so much tireless work in the engine room for his team, truly an unsung hero. Then there's someone like Hwang Hee-chan from Wolves, whose pace and finishing are consistently dangerous, but perhaps he doesn't get as much buzz as other forwards. Also, I think Mehdi Taremi from Iran is an absolute force in front of goal, yet he isn't always discussed among Europe's elite strikers.
